CASSEROLE COOKING Class: Week 4

     Welcome to week 4, the final week of casserole cooking class.  This week we returned to "easy casseroles".  Hopefully these time savers become some of your favourites.  Hopefully everyone enjoyed our 4 weeks together and I look forward to seeing some of you next week for "Jazz your Veggies" class.  Although I would like to take the class's advice and play Jazz music while we make veggies I am not sure if the others in the class will find that as funny as we did.
     We started this weeks class with a request from one of our absent class-mates for pie.  Not exactly casserole but the group consensus was: no objections.

     With our quick and tasty sidetrack we returned to the topic at hand.  Our first casserole was Macaroni Pie.  This dish is one of my Caribbean favourites and is usually enjoyed cold although we enjoyed it warm.

Bruschetta Chicken Bake:
Brushetta Chicken Bake Ingredients
Ingredients:
  • 1 540 ml can diced tomatoes
  • 1 package stove top chicken stuffing
  • 2 cloves garlic, minced
  • 1 1/2 lbs boneless chicken breast, cut into bite size cubes
  • 1 cup mozzarella cheese, grated
  • 1 Tsp dried basil leaves  
Directions:
Pre-heat oven to 400 degrees.  Mix tomatoes, stuffing mix and garlic just until stuffing mix is moist.

Place chicken in 13x9 baking dish and sprinkle with basil.  Cover with cheese and then the stuffing mix.  Bake for 30 minutes.  Serve and enjoy.
Cheesy Italian Sausage Bake:​
Cheesy Italian Sausage Bake Ingredients
Ingredients:
  • 2 cups penne pasta, un-cooked
  • 3/4 lbs Italian sausage, casing's removed
  • 2 cups halved zucchini slices
  • 1 red pepper, cut into small slices 
  • 3/4 cup pizza sauce
  • 1/2 cup cheese wiz
  • 1/4 cup parmesan cheese
Directions:
Pre-heat oven to 350 degrees.  Prepare pasta as directed on package.  Brown sausage.  Drain, stir in zucchini, red peppers and pizza sauce.
Meat and Vegatables in skillet
Drain pasta.  Add to sausage mix with cheese wiz and mix lightly.  Spoon into 13x9 baking dish and top with parmesan cheese.  Bake for 15 to 20 minutes.  Serve and enjoy.

I haven't noticed that it has been four weeks since you started your casserole cooking class! You have come a long way, and I am happy that your students as well as your online followers have been learning so much from you! That macaroni pie looks nothing but delicious and I am so much willing to try it anytime soon. The preparation doesn't look complicated, so I am hoping to have a free time to try if my version go macaroni pie would have the same as yours!
