During my last BBQ Spices and Rubs cooking class one of my students asked about doing baked potatoes on the BBQ. We talked about twice baked mascarpone cheese baked potatoes which are amazing but not something you would throw on the grill every night. What about something way easier and less expensive? My easy BBQ baked potatoes elevate a simple baked potato to another level with few ingredients and even fewer minutes of prep time.
Ingredients:
Rinse and wash the potatoes and cut off any sprouts or bad spots. Using a pairing knife, cut into the potato on a slight angle about half way through starting close to one end of the potato. Now make another slice adjacent to the previous slice creating a small wedge in the potato being careful not to slice all the way through the potato.
Ingredients:
- 1 Potato per person (I used red potatoes)
- 1 Onion
- 1/2 Clove of garlic per potato
- Stick of butter
- Salt and pepper to taste
Rinse and wash the potatoes and cut off any sprouts or bad spots. Using a pairing knife, cut into the potato on a slight angle about half way through starting close to one end of the potato. Now make another slice adjacent to the previous slice creating a small wedge in the potato being careful not to slice all the way through the potato.
Repeat this process several times until your potato look similar to the one pictured above. Peel an onion and slice it into thin slices approximately the same thickness as the wedges cut into the potato. Cut the onion slice in half creating a half moon shaped wedge.
Slice the garlic clove into thin slices as well.
Stuff one slice of onion and one slice of garlic in each of the wedges cut into the potato.
Cut small slices of butter from the stick until you have enough slices to put one into each onion and garlic filled wedge of the potato. Insert the butter into each wedge.
Season with salt and pepper and wrap each potato in tin foil.
BBQ on medium heat with the lid closed. Turn approximately 25 minutes after putting on the BBQ. Grill for another 20 minutes or so. A good way to check if the potato is done is to gently squeeze it with BBQ tongs. The potato should have some flex as it cooks and you should be able to feel when it is finished with the tongs. Remove from the grill and allow to cool slightly (the potato in the foil will stay hot for quite some time allowing for the grilling of other things). Carefully remove the foil and enjoy.
Hopefully you will find these BBQ baked potatoes simple and easy to make. The possibilities are endless when it comes to items to stuff the potato wedges with. Try jalapeno peppers for a spicy potatoes, strips of cooked bacon or even slices of ham. Use red onions to add some colour to make the potato pop on a dish next to a beautiful steak. Enjoy.....
