If you like to entertain, host parties or BBQ's or even take a dish to a friend's party you have been invited to you need a few quick and easy dishes in your recipe repertoire.  One of my favourites (and my guest favourites) is hot artichoke dip.  I love it because it takes 5 minutes to prepare and 15 minutes to bake.  My guests love it because of the richness of the dish's Umami components.  (Umami (savoury taste) is one of the 5 basic tastes, it is picked up by glutamate receptors and leaves a long lasting, mouth-watering and coating sensation over the tongue)  The Umami component in this dish is parmesan cheese with natural levels of glutamate at about 1200 (mg/100g).
Hot Artichoke Dip with crakers
Ingredients:
  • 1 - 14oz can artichoke hearts
  • 1 cup mayonnaise (I used Hellmann's olive oil mayonnaise)
  • 1 cup Parmesan cheese
  • 2 green onions (finely chopped) optional

Here is how to make it:
Drain artichoke hearts and coarsely chop.  Add to mixing bowl.
diced artichokes in a blowl
Add parmesan cheese, mayonnaise and mix well.
artichokes and parmesean cheese in a bowl with mayonaise ready to be added
Add mixture to a shallow oven proof dish (I used a Pampered Chef mini baker stoneware dish).
pre-baked artichoke dip
Bake in a pre-heated oven at 375 degrees for 15 minutes.  Remove and serve with crackers, pita bread or sliced baguette.  I opted for original Triscuit crackers.
You can use this recipe as a jumping off point for many other variations.  Add crab meat for a seafood artichoke dip.  Try adding a pack of frozen spinach for a different spin.  The combinations are endless.  Add this recipe to your party appetizer repertoire today.
