So I Finally made my take on the Domestic Exec's Breakfast for dinner Idea, Easy Bacon Egg Cups Benny.......

     Back at the end of April I was off to the grocery store to make Michelle Kay's "Easy Bacon Egg Cups".  http://domesticexecutiveonline.com/2014/09/15-fantastic-recipes-that-make-breakfast-for-dinner-a-winner/I had the idea of turning these cups into a variation of eggs Benedict.  Salmon steaks were on sale and I got side tracked and made Hollandaise Salmon Steaks instead.  Many months have since passed, but finally I got around to making my variation of this dish.  I should have got on this one sooner but late is better than never.

Ingredients:
(For 5 cups)
Bacon Egg Cups
  • 8 strips of bacon (1.5 strips of bacon per egg cup)
  • 5 eggs (1 egg per egg cup)
  • Pepper
  • English muffins
Hollandaise Sauce
  • 1 egg yolk
  • 2 Tsp lemon juice
  • 4 Tbsp. butter
  • 1 Tbsp. hot water
  • Salt & pepper to taste
Directions:
Pre heat the oven to 375 degrees.  Place the bacon on a foil lined cookie sheet and bake until mostly cooked but not crispy.

Let the bacon cool enough to handle.  Wrap the bacon around the inside of a muffin pan. Then place a small piece of bacon on the bottom of the muffin pan to make the bottom of the bacon cup.

Crack an egg in each muffin tin and season with salt and pepper.

Bake at 350 degrees for about 20 minutes.  The eggs should come out with the yolks still slightly runny, cook an extra 5 minutes to have the yolks cooked through if desired.

The perfect time to prepare the hollandaise sauce for the bacon eggs cup benny is while the cups are in the oven.  Bring a small amount of water to a boil in a pot large enough to fit a metal bowl.  Place one egg in a metal bowl.  Add 1 Tbsp. of hot water and season with salt and pepper.  Whisk the egg mixture slightly.  Turn down the pot of boiling water to a simmer.  Place the metal bowl in the pot (my bowl fits perfectly inside the pot, resting on the lip of the pot).  Add the butter and lemon juice.  Whisk vigorously.  You want the egg mixture to remain a liquid and failing to whisk enough will cause the egg mixture to cook turning it into scrambled eggs.  The sauce will gradually thicken.

Now toast some English muffins and top with the bacon egg cup.

Then top with hollandaise sauce and enjoy.

It looks like when you are making this delicious easy bacon egg cups, you have to be more careful and pay attention to what you are doing in order to make it perfect and really yummy. It requires a lot of time and patience. I think I'll going to make this food since all of us here loves bacon. I think this is really perfect for breakfast. I might be able to do it as good as what you have did, but the most important thing is we will be able to have something new.
