So I Made Jerk Marinade From Scratch.......

     The good people at Grace Foods http://gracefoods.ca/ make an excellent bottle of Jerk Marinade for about $4.00.  This is usually my got to ingredient when I'm feeling jerk chicken.  You buy it, open the bottle and it's ready to use, convenience factor +10.

     There is another way, all you need is about 16 ingredients and you're almost there (this is why Grace Foods is in business).  It will cost around $15 to make if you have some of the spices on hand, if you need everything expect double to triple that number.

Here is what you will need:
  • 6 (or more for hot, less for mild) sliced scotch bonnet peppers
  • 2 Tbsp thyme
  • 2 Tbsp ground allspice
  • 8 cloves of garlic, minced
  • 3 medium onions, chopped
  • 2 Tbsp sugar
  • 2 Tbsp salt
  • 2 Tsp black pepper
  • 2 Tsp ground cinnamon
  • 2 Tsp ground nutmeg
  • 2 Tsp ground ginger
  • 1/2 cup soy sauce
  • 1/2 cup olive oil
  • Juice of 1 lime
  • 1 cup orange juice
  • 1 cup white vinegar

Here is how to do it:
Chop onions and add to blender.

Slice scotch bonnets and mince garlic, add to blender.

Now add the rest of the ingredients.

Then blend.

Pour Jerk marinade over chicken (I used drums and thighs) making sure to set some aside for basting when grilling the chicken.  Rub marinade thoroughly into meat, cover and refrigerate overnight.  Then BBQ the marinated chicken turning frequently.  Apply left over sauce to chicken as it cooks.

The chicken will start to blacken as it cooks which will develop a flavourful crispy skin.
