So Two Of My Favourite Things Come Together In Perfect Harmony, Carib Lager Mussels.......11/26/2015 I love mussels and I love Carib Lager, so why not put the two together? The results, some of the best mussels I have ever had. They were also quick and easy to make. Here is how you too can make this harmonious meeting of ingredients happen. Ingredients:
Chop onions. Melt butter in a large skillet that has a lid. Add onions and cook over medium heat, occasionally stir. Try to cook the onions until soft without burning them or the butter. Cut the lemon in half, squeeze the juice of one half of the lemon into the fry pan. Add the squeezed half of the lemon to the fry pan (save the other half of the lemon, cut into wedges and served with the finished dish). Now add one can/bottle of Carib Lager. Allow the Carib to come to a simmer. Open and rinse the mussels. Check for any that are dead (stay open), remove the mussels beard (fibers that protrude from the shell) and rinse. The Canadian Cove mussels I purchased were rope grown. Typically the mussels beard is removed during harvesting. These mussels were also free of barnacles and thus didn't need to be scraped clean. Thank you Canadian Cove for producing such a consumer friendly product. Add the mussels to the fry pan, season with salt and pepper and cover. Cook the mussels for about 8 minutes. Stir the mussels a few times while cooking. Finley chop the green onions and cut the other half of the lemon into wedges. Remove lemon half from skillet and discard. Pour mussels and liquid into a serving bowl, top with green onions and serve (discard any mussels that do not open during the cooking process). Serve lemon wedges on the side. I made some garlic bread to accompany the mussels. The garlic bread is great to dip in the broth. I also recommend a spoon to finish off whatever broth the bread fails to soak up. A bowl is also handy for the empty shells. 10 minute prep time followed by a 10 minute cook times makes this dish an easy elegant meal or it can be served as am appetizer. Substitute your own favourite beer for Carib Lager at your own risk.

Definitely not the most enticing recipe I've seen here on your website, but I have to say that the combination was really nice! I guess, it is a perfect appetizer, especially for those who love mussels that much! By the way, thank you for sharing this recipe to us as I am so much willing to try it as soon as possible. I am not just sure if my mom is going to love it, but I will still present it to her because I am pretty sure it would be great!
