Jay Eatz and the G.F. have recently returned from a trip to Grenada. Lovely place and we both recommend you should go. While you are there, a trip to the neighboring Island of Carriacou is a must (same country, different island). A quick 90 minute ferry ride or a 20 minute flight and you are there. We did both.

That's right; Jay Eatz has been pretty slack on the ol' blog lately. I have a few excuses. Excuse #1: Started instructing cooking classes. I have been doing some moonlighting teaching a cooking class or two and guess what? There is some work involved in lesson planning. Oh no, who would have thought? You have to think about the message you're going to deliver to your students, how they can replicate it at home, you're allotted class time and you have to shop for supplies.
That's right, Cheese Nips, the perfect ingredient for some cheese burgers sans cheese. Probably not going to make the list of the healthiest burger but that wasn't going to happen with the burger toppings I had in mind anyways. Here is what you will need:
So I was going to do Breakfast for Dinner but ended up making Hollandaise Salmon Steaks.......4/30/2015 A fellow blogger, Michelle Kay, had an inspirational post I read the other day entitled "15 Fantastic Recipes That Make Breakfast For Dinner A Winner." http://domesticexecutiveonline.com/2014/09/15-fantastic-recipes-that-make-breakfast-for-dinner-a-winner/ Off to the grocery store I went with breakfast for dinner in mind. I grabbed a dozen eggs, a pound of bacon, milk, butter, some potatoes for home fries and some hollandaise sauce. I was ready to check out and realized I had forgot some English muffins (my plan was to make Michelle's "Easy Bacon-Egg Cups" then add it on top of a toasted English muffin and drown it in hollandaise sauce). Off to the bread section I went but got side tracked in the seafood section. A few packs of salmon steak were marked down to half price. Seeing the hollandaise sauce my mind quickly changed and thoughts of breakfast for dinner slowly left my mind.
Hollandaise topped grilled salmon steak with a side of broccoli and rice was the new meal plan. For me Michelle made some key points that makes breakfast for dinner so enticing, it's cheap, easy and a quick clean up. These were all goals I was hoping to achieve with my grilled salmon steaks.
So Jay Eatz works in Strathroy, Ontario Monday to Friday. On the ol' work fridge sits a little business card stuck by a magnet. It reads Banh Mi Shop in a large font and Vietnamese sandwiches in a slightly smaller font. A week goes by and this business card is glaring me down daily. I ask my fellow co-workers "any one ever try out this Banh Mi place?" I get two no's and whats that? I shrug it off and the weeks continue to roll on. Every day that card keeps eyeing me down, occasionally it falls off the fridge, I pick it up and put it back to eye me down some more. Interest gets the best of me and I decide to investigate this foreign place. I turn to my friend Google to give me a snap shoot of this mystical Banh Mi Shop. Google directs me to a Facebook page with over 600 likes. Intrigued I head to TripAdvisor to get their take on things and what do you know #2 rated restaurant in Strathroy. Now I'm sold and am going (downfall when all your co-workers are from out of town is no word of mouth referral).
I hop in the car and go. I should have seen this coming, but had a brain fart, the place is bumpin. I was first introduced to macaroni pie on a trip to Antigua. While staying at Jolly Harbour on a European meal plan the G.F. and I had a chance to explore some of the nearby eateries. A particular favourite of ours was Miracle's South Coast Restaurant and Bar. Everyone loves a good rack of ribs, that's why Rib Fests are so popular. Every summer almost every city dedicates a weekend to celebrate the "RIB" but Rib Fests can be pricey, you can do it at home just as well if not better and who wants to wait for Rib Fest to enjoy a good rib?
That's right, Lobster Alfredo. No canned lobster or jarred Alfredo sauce for this guy. The dish sounds so luxurious but it is actually very simple to make, plus you will look like a rock star in the kitchen for your next date night. (Chef Coat and hat optional)
Fall is here and so is Thanksgiving, another great holiday where the turkey fly's into our lives again. For many of us the turkey will not fly back into our lives until Christmas. This week Jay Eatz is going to explore not one but two ways to cook that perfect turkey for this weekend's holiday.
I am going to say it, I might prefer sweet pickled pork cottage roll over ham. It has the same kind of ham flavour but with just a little something more. It is essentially a boneless pork shoulder butt roast but its cured in a sweet and salty brine. It's cheaper than a bone in ham and not a formed ham (made from many different cuts of pork). It is simple to make and would be very hard to screw up. You cook it in liquid so it should never come out dry or over done like a messed up ham could.
So it might be taco tuesday but i say it's shrimply Tuesday with a side of crab cake.......3/24/2015 I decided to go down a different path this week, sorry Old El Paso, no taco Tuesday for Jay Eatz this week. Shrimply Tuesday inspired by one of my favourite restaurants Red Lobster or what me and the g.f. refer to as Red Lobby. One of the best things about Red Lobster besides the seafood is those delicious biscuits they give you an unlimited supply of so we will take a look on how to do those at home. Also on the menu, easy oven garlic butter shrimp and finally crab cakes with zesty lemon aioli.
Let's start with the biscuits. What you need:
Now how to make them, super easy. Preheat the oven to 450. Mix the Bisquick's, water and cheese in a bowl. Roll out the mixture on a lightly floured surface until about an inch thick. Cut the dough into 3 inch squares and place on a baking sheet, Melt the butter and seasoning together and brush on top of the biscuits and bake for about 10 minutes. The store was out of regular Bisquick's mix so I went with the gluten free kind. Let's just say I wouldn't do that again unless I was entertaining someone with a gluten intolerance. On a side note the flavour was still there even with the flour substitution. Also a wine bottle makes for a great rolling pin if you don't have one. That's right Carib Lager BBQ beef shank. My original intentions was to show case another under $6 a plate dish. I figured something from the hooves or ass section of the cow would be my best bet. I went slightly higher than the hoof and decided on beef shank but guess what? Beef is expensive in Canada no matter what cut you are getting. The shanks were one of the more reasonable cuts but still $12.10/kg. I purchased two pieces costing slightly over $5 and weighing in at almost a pound each. So the $6 a plate idea quickly went out the window. I think this dish is coming in at about $10.50 per serving not including the two + hours of propane but hey, it was good.
That's right, Neil Diamond and he puts on one hell of a show (74 years old, no opening act, no intermission, 2.5 hour set and dancing the whole show). I decided to invite my mom from out of town to go with me. She offered to take me out to dinner before the show and I obliged. Now where to go? We could have gone to a chain like Kelsey's, Jack Astor's or East Side Mario's. These are all great options but my mom's town has most of these chains and so does any Canadian city with a decent population. I thought let's pick somewhere that you could only go to in London, support local business as well as the downtown core and be close to Budweiser Gardens. Keep in mind that mom was paying so I could have chosen the Tasting Room or Michael's on the Thames but I decided to check out a place my German buddy swears by. I knew ma duke's would be up for whatever and appreciates supporting good local cuisine, breaking free from the restaurant chain's and truly getting a taste of London so Marienbad's it was.
Jay Eatz was once again eating on the cheap, cheap in time, cheap on money but tasty on the mouth. With a Hungry Man costing almost $5 and taking 8+ mins in the microwave you can't tell me you don't have an extra dollar or an extra 12 mins. This meal is a million times lighter in sodium and 10 times as healthy. Here is what i did.
I stopped at the local grocery store and checked out the fish isle. Lately I have been trying to put fresh fish into my bi-weekly meal rotation. One of my new favourites is steelhead trout. You can Google steelhead trout recipes and all kinds of fancy dishes will come up, some quick, but most require $5 to $10 worth of ingredients to prepare. I suggest trying some of these some time but for quick, simple and easy only two ingredients are required. Butter and salt. |
